Flour (100%), H2O (64%), Instant dry yeast (.5%), salt (1.5%). Mix, knead, form into balls, refridgerate 24 hours.
Checked out Delarosa on Chestnut St. Decent. Crust was a little bland.
#18 & 19, Roasted butternut squash, mozz, parsley and basil, using Sunday’s leftover dough in the indoor oven

For my sauce, I use Stanislaus Alta Cucina tomatoes, recommended to me by Joe of Joe’s Pizza on Carmine St. in NYC. They’re hard to find, so I order them from this place, Sciabica’s, who also make pretty good olive oil.
